Ordering (well-done) muskox and reindeer steaks in Nuuk, Greenland
You asked for it, so I'm trying the local muskox and Rudolph's cousin.
After catching a fish and interviewing locals here in Nuuk about whether they'd like their island bought up by Donald Trump, it was time to sample Greenlandic cuisine: muskox and reindeer served with garlic and butter.

I’m delighted to find out so much more about Greenland, it’s people, it’s food and it’s relationship to Denmark. I’m so intrigued that I am thinking of it as a future vacation destination. Thanks!

Michael LeBrun commented 2019-09-04 18:54:04 -0400I marinate the game in a combination of red wine, garlic and other spices,onions and a hint of my own hot sauce.
I also use the marinate to slow…very slow-cook the game.It can be cut with a fork when finished.Usually served with (one of my favourites)…. wild rice and a green vegetable.

Maurice Potvin commented 2019-09-04 18:52:27 -0400I don’t know how you can cook any game meat well done without it drying out. Moose roasts HAVE to be done medium rare or they’re so dry they’re almost unpalatable. The only game you should cook well done is bear. That’s necessary to kill the trichinosis parasite that infest many bears. Of course you can get around that by curing them and making then into ham, bacon and sausage. I’ve never had muskox but I’ve had plenty of caribou, which is the animal as reindeer. The best way I’ve had them is char-broiled medium rare… they’re delicious. -

Best way to screw up a game steak is to overcook it…and anything more than medium rare is damn well overcooked. -
